As a barista, your ability to craft the perfect chilled beverage is crucial. This manual focuses on mastering three core areas: using the right amount of ice, layering ingredients effectively, and mixing in syrups properly. These tips will help you ensure every iced drink you serve is both refreshing and flavourful. Let’s dive in.
The Right Amount of Ice
Ice plays a critical role in the texture, temperature, and dilution rate of our drinks. Here’s how to manage it:
- Iced Lattes, Teas and Lemonades: For these, fill the cup to the top of the logo on the iced cup. This ratio ensures the latte is chilled and flavorful without becoming too watered down as the ice melts.
- Iced Americanos and Frappes: Fill these cups to the brim with ice. The extra ice complements the stronger flavours of americanos and helps thicken up frappes, while maintaining a cold, refreshing consistency longer.
- Exception: If a customer asks for a specific amount of ice in their drink, it’s always best to make it to their liking.
Layering for Optimal Flavour
Layering correctly enhances both the visual appeal and the taste of each drink. Here’s the approach:
- Start with Ice: Based on the drink, add ice to either 3/4 full or to the brim of the cup. This initial layer sets the stage for a refreshingly cold beverage.
- Add Milk (for Lattes): Pour milk over the ice. The cold milk interacts with the ice, beginning the chilling process without immediate dilution. If espresso is added first, the ice will begin to melt, creating a watered-down drink.
- Espresso or Matcha on Top: For lattes add your espresso or matcha last. This method allows the hot beverage to cool gradually, creating a smooth, integrated flavour as it mixes with the milk and ice.
Syrup Integration Techniques
Avoid having syrup sit at the bottom of the cup as pictured above.
Mix syrup with your base prior to pouring it over milk to keep the cascading effect.
To ensure syrups contribute to the drink’s flavour profile without sinking to the bottom, follow these tips:
- Mix Before Ice : For drinks where syrup flavour is paramount, mix the syrup with the espresso or matcha base before pouring it over the ice. This approach guarantees flavour consistency from the first sip to the last.
- Stir Well: If adding syrup after the ice, make sure to stir the drink thoroughly but gently from the bottom up. This method helps distribute the syrup evenly while maintaining the integrity of the layered look.
