Cortado
A cortado is espresso with roughly the same amount of milk to cut the acidity of the drink.
Ingredients:
- Espresso
- 2% milk by default but can be modified to the customer’s choice of milk.
To make a cortado, use a ceramic cappuccino cup if ordered to stay, or a 10 oz cup if ordered to go.
- Pull a double short (2 oz) shot of espresso into your cup.
- Steam and aerate your milk to cappuccino texture at 65°C or 150°F.
- Pour the milk over the espresso until you’ve added roughly the same amount of milk as espresso, but do not fill the cup passed 8 oz.
Note: Rooted in Spanish origin, the name cortado translates to “chop up” or “cut”, as the drink is cut with milk to subdue the acidity of the espresso.
